Seeds can be stored in the refrigerator for about three days and can be frozen in an airtight container for about six months.

PREPARATION AND SERVING SUGGESTIONS:
• To remove the seeds, slice off the crown end and score the rind vertically from top to bottom.
• Place the pomegranate in a bowl of water and break the sections apart. The seeds will sink to the bottom and the membranes and rind will float.
• To make juice, put the seeds in a food processor until juice is formed and strain the seeds through a fine-mesh sieve. |

For example, pomegranate is a great fruit, but it takes a lot of work to eat it, and the edible part of the fruit is small. But pomegranate juice is widely available. Hence, the juice made the list (see page 259); the fruit did not. Similarly with the noni and acai berries. The noni berry tastes terrible (but the juice—see page 257—does not); plus, you can't find the berry itself anywhere but the tropics. Place the pomegranate in a large bowl with enough water to cover it completely. Use your fingers to pull apart the quarters, then separate the seeds from the rind and the membrane. The seeds will fall to the bottom of the bowl, and most of the small pieces of membrane will float. Discard the pieces of skin and large chunks of membrane. First things first. The pomegranate didn't get its own entry in this book not because it doesn't deserve it, but because it's kind of hard and time-consuming to eat. Though the fruit is eaten raw and is a common ingredient in Italian, Middle Eastern, Latin American, and Spanish cooking, extracting the edible parts takes more time than most people are willing to put in. (Only the seeds and the juicy translucent scarlet red pulp surrounding them are the edible part.) The juice, however, is readily obtainable, and most of the recent research has been done on the juice. |
